Recipe: Mini Cheesecakes


  • 1 (12 ounce) package vanilla wafers
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (21 ounce) can cherry pie filling


  1. Preheat Oven: Preheat the oven to 350 degrees F (175 degrees C). Line two 24-cup miniature muffin tins with paper liners.
  2. Prepare Vanilla Wafers: Crush the vanilla wafers into fine crumbs. You’ll need approximately 1 1/2 cups of crumbs.
  3. Line Muffin Tins: Place 1/2 teaspoon of crushed vanilla wafers into each paper liner in the muffin tin, pressing down gently to form a crust.
  4. Prepare Cheesecake Batter: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar, eggs, and vanilla extract. Beat until well combined and smooth.
  5. Fill Muffin Liners: Spoon the cream cheese mixture into each muffin liner, filling almost to the top.
  6. Bake: Bake in the preheated oven for about 15 minutes, or until the cheesecakes are set and slightly puffed.
  7. Cool: Remove the mini cheesecakes from the oven and let them cool in the muffin tins for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. Top with Cherry Pie Filling: Once cooled, top each mini cheesecake with a teaspoonful of cherry pie filling.
  9. Serve: Arrange the mini cheesecakes on a platter and serve. Enjoy these delicious treats!
